Did you know May is National Salad Month? Each week this month, we’ll take a look at one of our fresh and deliciously healthy salads. This week, we’re highlighting our yummy Lentil salad. Both vegan and vegetarian friendly, our lentil salad delivers great flavors along with lots of nutrition, thanks to the amazing legume that is the lentil.
Lentils offer many health benefits and are regarded as one of the healthiest foods on the planet. Because of their size, lentils have more nutrition by their weight, packing lots of nutrients in a small package. Lentils are high in protein and cholesterol-lowering fiber (soluble and insoluble), low in fat and sodium, and are the most alkaline of protein sources. Also, in comparison to other beans, they are much faster to cook and easier to digest. On their own, most lentils have a tasty flavor, with minimal seasoning or spices necessary. Our lentil salad enhances the lentil flavor for a delectable salad to enjoy on its own or as a side to one of our yummy sandwiches.
Our lentil salad mixes green lentils with bell peppers and cracked wheat. A light drizzle of our own Mediterranean dressing completes the salad, pulling all the ingredients together for incredible flavor in each bite.
